Description

MEXICO MOUNTAIN WATER DECAF • THE PEAK WHISPER

99.9% Caffeine-Free • Mountain Water Process • Shade-Grown • Indigenous Cooperative • Chemical-Free

Born of volcanoes, shaped by revolution. Mexico's highland coffee—grown by indigenous Tzeltal, Tzotzil, Maya, and Zapotec farming families across Chiapas, Oaxaca, and Veracruz—is cultivated on plots of fewer than three hectares, in shade-grown, chemical-free polyculture forests that have no equal.

Decaffeinated at the foot of Pico de Orizaba—Mexico's highest peak at 5,750 metres—using pure glacial meltwater and nothing else. The Mountain Water Process removes 99.9% of caffeine through osmosis, leaving every flavour compound completely intact. No solvents. No shortcuts. The bean's soul remains.

  • Grown by indigenous cooperative farmers committed to organic, shade-grown cultivation
  • Naturally occurring flavour notes—contains no added nuts or flavourings

Grown in silence. Decaffeinated by nature.

French Press
French Press Mountain Water Decaf thrives in full immersion. The process preserves every flavour compound intact, and French Press draws out the smooth body and brown sugar sweetness beautifully. Coarse grind, 4 minutes at 93–95°C, 1:15 ratio. Plunge slowly and pour immediately for a clean, chocolatey cup with no bitterness.

Batch Brew
Batch Brew An exceptional batch brew — consistent, smooth, and approachable across every cup. The low-acidity profile means it holds well in a thermal carafe without turning bitter. Medium-coarse grind, 92–95°C, 1:15 ratio.

Batch Brew

Espresso
Espresso Surprisingly capable as an espresso — the Mountain Water Process retains enough body and sweetness to pull a rich, balanced shot. Dial in carefully at 93°C with a medium-fine grind. Expect chocolate and malt rather than brightness. Best suited to experienced home setups.

Espresso

V60
V60 The clean finish of Peak Whisper makes it ideal for pour-over. V60's filter clarifies the milk chocolate and toasted almond notes with precision. Medium-fine grind, 93°C, bloom for 30 seconds with 2× water weight, then pour in steady spirals over 2:30–3:00 minutes total.

Aeropress
Aeropress isn't the ideal match for the Pinhal Collective. The pressure-assisted extraction amplifies body and sweetness — which sounds appealing, but with a naturally heavy, low-acid natural-process bean like this, it can tip the cup into thick and one-dimensional. The chocolate and hazelnut nuances that make Pinhal special tend to merge into a single dense note rather than expressing cleanly. For the best of this bean, French Press, V60, or Drip will serve you far better.

Aeropress

Cold Press
Peak Whisper was made for cold brew. Decaf extracts gently, and cold brew's slow, low-temperature steep is the perfect match — no bitterness, no flatness, just pure chocolate and caramel sweetness drawn out over time. Use a coarse grind, a 1:8 coffee-to-water ratio, and steep for 14–18 hours in the fridge. The result is a silky, indulgent concentrate with almond depth and zero caffeine. Serve over ice, dilute to taste, or use as a base for iced lattes. All the ritual. None of the caffeine. None of the bitterness.

  • Caffeine & Heart Health

Mexico Peak Whisper is 99.9% caffeine-free — decaffeinated using pure glacial meltwater from Pico de Orizaba, with zero solvents and zero shortcuts. The Mountain Water Process removes caffeine through osmosis, leaving every flavour compound and antioxidant completely intact. Smoother on the stomach than heavily roasted commercial coffee, and kind to those sensitive to caffeine. According to theBritish Heart Foundation, moderate coffee consumption can be part of a healthy lifestyle. All the ritual. None of the caffeine.

  • Expert Tip

Your Brew, Perfected.Grind fresh, every time — the Peak Whisper's Mountain Water Process preserves every flavour compound intact, and freshness matters. Use a medium-coarse grind for French Press or Batch Brew, medium for Drip and Aeropress, and medium-fine for V60 or Espresso. Brew at 90–95°C — decaf extracts slightly faster than caffeinated coffee, so err on the lower end to avoid bitterness. A 1:15 coffee-to-water ratio is your baseline; nudge to 1:14 for a richer cup or 1:16 for something lighter. And always pre-wet your filter — it removes any papery taste and brings the brewer up to temperature before the first pour.

  • Storage & Freshness

Keep It Fresh. Keep It Flavourful.Store in a cool, dry place away from direct sunlight, heat, and strong odours. Our resealable pouches are designed to lock in freshness — squeeze out excess air after each use and seal tightly. Once opened, best consumed within 6 months for peak flavour. Unopened, the bag stays fresh for up to 24 months. Do not refrigerate — condensation degrades the bean's natural oils and dulls the chocolate and almond notes that make Peak Whisper exceptional. For whole bean, grind only what you need — ground coffee loses its character within days of opening.
