Ethiopia is where coffee begins. The Yirgacheffe region, nestled within the Gedeo Zone, earned its reputation not through marketing but through the sheer, undeniable distinction of what its land produces—the benchmark against which all floral, tea-like coffees are measured. This micro-lot comes from the Negele Gurbitu plateau, grown at 1,700–2,000 MASL by 500–550 smallholder families, each tending modest garden plots shaded by indigenous Acacia and Teak canopies that have stood for generations.

Harvested by hand and processed at the Negele Gorbitu Cooperative Washing Station—a facility with roots stretching back to 1975—through strict wet fermentation and 18 days of sun-drying on raised African beds. Every element of interference stripped away. What remains is a direct, unmediated conversation between soil, altitude, and cup.

French Press The French Press suits Ethiopia Yirgacheffe well. Full immersion brings out the natural sweetness and body while the floral notes remain present. Use a coarse grind, 92°C water, and a 1:15 ratio. Steep for 4 minutes and press slowly. A fuller, rounder expression of this origin.

The natural process and high-altitude growing conditions produce a shot with intense floral aromatics, a bright berry-like sweetness, and a lingering jasmine finish — complex and distinctive in the cup. Use a fine grind, 91°C, and a 1:2 ratio. Pull a 25–30 second shot. Expect something far removed from a conventional espresso — vivid, perfumed, and unforgettable.

Ethiopia Yirgacheffe The Ethereal Highland is recommended for the Aeropress. A shorter steep time and gentle pressure keeps the delicate florals and bright citrus intact while adding a touch more body and natural sweetness to the cup. Use a medium-fine grind, 90°C water, and a 1:12 ratio. Steep for 90 seconds and press slowly and steadily. Bright, clean, and intensely aromatic.

Cold Press
thiopia Yirgacheffe The Ethereal Highland works surprisingly well as a cold brew. The natural process and fruit-forward profile — berry sweetness, floral aromatics, and a soft citrus edge — translate beautifully into a chilled, refreshing cup with natural sweetness and no bitterness. Use a coarse grind and a 1:8 ratio. Steep in cold water for 16–18 hours in the fridge. Serve over ice, straight — no milk needed.

    Grind fresh, every time. Ethiopia Yirgacheffe rewards a medium-fine grind — coarser for French Press and cold brew, finer for V60, espresso, and Aeropress. Brew at 90–92°C — never boiling, to protect the delicate florals. Give it a 30-second bloom to release the CO₂. The jasmine, citrus, and berry notes open up beautifully as the cup cools — don't rush it.

    Grown in the Yirgacheffe district of southern Ethiopia, at 1,700–2,200m above sea level — the birthplace of coffee itself. Ancient heirloom varieties, rich red soils, and a distinct wet season create the ideal conditions for slow cherry development and extraordinary cup complexity. Our resealable pouches are designed to lock in freshness — squeeze out excess air after each use and seal tightly. Once opened, best consumed within 6 months for peak flavour. Unopened, the bag stays fresh for up to 24 months. Do not refrigerate — condensation degrades the bean's natural oils and dulls the delicate floral and citrus notes that make Yirgacheffe exceptional. For whole bean, grind only what you need — ground coffee loses its character within days of opening.
