Pioneering smallholder cooperatives of San Rafael pool hand-harvested Caturra and Catuai cherries into centralised micro-mills, where clean mountain spring water, controlled fermentation, and hand-raked sun drying on open patios honour a fully washed processing legacy built over generations.
