Expert Tip

For the cleanest expression of Colombia's milk chocolate and red apple notes, brew at 92–94°C using a V60 or Chemex at a 1:15 ratio. Avoid boiling water — it will flatten the delicate acidity. A 30-second bloom unlocks the full sweetness of this fully washed lot.
